Ingredients:
Veggies as per your choice – 1 Potato, 1 carrot, 2 Green Chillies, 5 Okra, 1 Eggplant, 10 bulbs of cauliflower
• Oil
• Cumin seeds 1/4
• Asafoetida 1 Pinch
• Onion - 1
• Tomato Pureé - 1
• Salt – as per taste
• Turmeric – 1/4
• Red Chilli Powder – 1/2
• Kashmiri Red chilli powder – 1/2
• Coriander powder – 1/4
• Water
• Garam Masala 1/4
• Chaat Masala 1/4
• Magic Masala 1
• Coriander Leaves
Method:
Step 1- Cut your favorite veggies in small equal pieces
Step 2- Deep fry the veggies for 2-4 minutes in medium to low flame and keep them aside.
Step 3- Take a tawa and heat some oil, crackle some cumin seeds and add asafetida
Step 4- Add roughly chopped onions and tomato puree and sauté it.
Step 5- Add salt and fry it for a while and add spices - Turmeric powder, Chilli powder, Kashmiri red chilli powder, coriander powder.
Step 6- Add water and cook until the oil separates and then add the fried Veggies into it and coat them properly
Step 7- Then for extra flavors add, Garam masala, chaat masala and magic masala
Step 8- once the masala is coated properly, cook it for another 2-3 minutes and garnish some fresh coriander leaves and serve hot.
