Ingredients:

Veggies as per your choice – 1 Potato, 1 carrot, 2 Green Chillies, 5 Okra, 1 Eggplant, 10 bulbs of cauliflower

•  Oil
•  Cumin seeds 1/4
•  Asafoetida 1 Pinch
•  Onion - 1
•  Tomato Pureé - 1
•  Salt – as per taste
•  Turmeric – 1/4
•  Red Chilli Powder – 1/2
•  Kashmiri Red chilli powder – 1/2
•  Coriander powder – 1/4
•  Water
•  Garam Masala 1/4
•  Chaat Masala 1/4
•  Magic Masala 1
•  Coriander Leaves

Method:

Step 1Cut your favorite veggies in small equal pieces

Step 2Deep fry the veggies for 2-4 minutes in medium to low flame and keep them aside.

Step 3Take a tawa and heat some oil, crackle some cumin seeds and add asafetida

Step 4Add roughly chopped onions and tomato puree and sauté it.

Step 5Add salt and fry it for a while and add spices - Turmeric powder, Chilli powder, Kashmiri red chilli powder, coriander powder.

Step 6Add water and cook until the oil separates and then add the fried Veggies into it and coat them properly

Step 7Then for extra flavors add, Garam masala, chaat masala and magic masala

Step 8once the masala is coated properly, cook it for another 2-3 minutes and garnish some fresh coriander leaves and serve hot.
