Patriotic tadka in Italian twist: Tri-colour pasta

When tradition meets taste, magic happens! This Republic Day, we celebrated with a delicious fusion that brings together the essence of India and the flavors of Italy—Tri-Colour Pasta. Inspired by the hues of the Indian flag, this dish adds a patriotic touch to your plate while delivering a burst of flavors that make every bite memorable.

This delicious fusion represents the spirit of unity in diversity—just like India itself. All you need is the hunger for patriotic treat and a recipe, which is as following:

  • Ingredients:-

2 cups pasta

Water

1 tsp salt

1 tbsp oil

  • For the Green Sauce:

1 cup spinach leaves (blanched and pureed) or 2 tbsp pesto sauce

1 tsp garlic

1 tbsp butter or olive oil

1/2 tsp black pepper powder

Salt

  • For the White Sauce:

1 cup fresh cream or 1/2 cup milk with 1 tbsp flour

1 tbsp butter

2 garlic cloves

1/4 tsp black pepper powder

1/4 tsp mixed herbs

Salt

  • For the Red Sauce:

2 medium-sized tomatoes

1 small onion

1/2 tsp chili flakes

1/2 tsp mixed herbs

1 tsp olive oil

Salt

  • Recipe 

Instructions:

Boil the Pasta: Cook pasta as per the package instructions. Add salt and oil while boiling. Drain and set aside.

Cut all the vegetables with Kohe knives. 

Prepare the Sauces:

Green Sauce: Heat butter/olive oil in a pan, add garlic and sauté. Add spinach puree/pesto sauce, black pepper, salt, and cook for 2 minutes.

White Sauce: Melt butter in a pan, add minced garlic and cook until fragrant. Stir in flour, then gradually add milk or cream while whisking. Add black pepper, mixed herbs, and salt. Simmer until thick.

Red Sauce: Heat olive oil, sauté chopped onions until translucent, then add chopped tomatoes. Cook until soft, then blend into a smooth puree. Return to pan, add chili flakes, mixed herbs, and salt. Simmer for 5 minutes.

Assemble: Divide the pasta into three portions, mixing each with one of the sauces.

Plate & Serve: Arrange the pasta sections in saffron, white, and green order, representing the Indian flag.

Garnish & Enjoy: Top with grated cheese and a sprinkle of mixed herbs.
