•  1 cup instant oats
•  1/2 cup yogurt

•  1/2 tsp mustard seeds

Prepare the Batter: In a mixing bowl, combine the instant oats and yogurt. Mix well and let it sit for 15-20 minutes. This allows the oats to absorb the yogurt and soften.

Sauté the Seasoning: Heat a little oil in a pan. Add mustard seeds and cumin seeds. Once they splutter, add the asafoetida, ginger-green chili paste, and chopped vegetables. Sauté until the vegetables are tender.

Combine the Ingredients: Add the sautéed vegetables, grated cheese (if using), chopped coriander leaves, and salt to the oats-yogurt mixture. Mix thoroughly to form a batter with a thick, pancake-like consistency.

Paddu Time: Heat a paddu or appe pan and lightly grease each cavity with oil. Pour spoonfuls of the batter into each cavity, filling them up to about three-fourths full.

Cook to Perfection: Cover the pan and cook the paddus on medium-low heat for a few minutes. Once the bottom turns golden brown, flip them using a skewer or a fork. Cook until both sides are evenly golden and crispy.
